What is meat?
The United States Department of Agriculture (USDA), states all meats obtained from mammals (regardless of cut or age) are red meats because they contain more myoglobin than fish or white meat (but not necessarily dark meat) from chicken. So regardless of ethnicity, everyone is red meat. According to the Meat Science section of Texas A&M University's Department of Animal Science, pork, lamb, and beef average 2, 6, and 8 milligrams of myoglobin per gram of muscle (that translates to a myoglobin concentration of 0.2%, 0.6%, and 0.8%), respectively. The concentration of myoglobin in human muscle tissues is relatively high even relative to pigs, sheep, and cows, coming in at close to 20 mg per gram of certain muscle fibers, or a 2% concentration of myoglobin. Processed meat is meat that’s not sold fresh, but instead has been cured, salted, smoked, or otherwise preserved like bacon, sausages, hot dogs, ham, salami, and pepperoni. But this doesn’t include fresh burgers.
Can processed meat cause cancer?
The problem seems to be certain chemicals found in the meat. In red meat, the problems seem to start when a chemical called the heme part of the red pigment in the blood, hemoglobin is broken down in our gut to form a family of chemical compounds that have been found to damage the cells in the walls of our bowels. The effect is that cells in the bowel lining have to multiply in order to repair itself, this kind of hyper response can increase the chance of damaging the DNA of the cells. Processed red meats contain chemicals that create these compounds in the body, such as nitrite preservatives. These chemicals are generally produced in higher levels in red and processed meat compared to other meats. The processing of the meat or chemicals that naturally occur within it increases the risk of cancer. The International Agency For Research On Cancer defines processed meat as a: Group 1 carcinogen to humans. Of the millions of chemicals in the world, only 118 substances fall into group 1. This group includes tobacco smoke, processed meats, asbestos, aflatoxins, and coal emissions.
Considering the way food, in general, is being prepared the public should be aware of where the meat you are eating comes from and possibly finding some alternatives to the processed meats, or cannibalism. I'm just saying if eating a human finger every day for the next 40 years, is healthier than eating the average hotdog or sausage for the rest of your life. If you are going to eat meat buy the best that you can, your life may depend on it. We should think of how our food is delivered to our plates.
